It washes away steel residue– Water cleans both the blade as well as the ceramic abrasive of any steel residue that results from sharpening. Cleaning the abrasive in particular ensures it remains clean at all times, and is not loaded with steel. I highly recommend this sharpener because of its ease of use, saving time and it is perfect for lazy people like me. The sharpener really lived up to its expectation, and i'm really loving it! I even used a piece of paper to test the sharpness of it like the demo I saw on youtube.The sharpener is sturdy, and has very good quality big ceramic stones. The ceramic stones are made in Japan, and the plastic is made in China. I would definitely trust the made in Japan quality, because they never fail me. Answer: I would not use this to sharpen the following knives: ceramic, serrated and single sided blades (like sushi blades). I would also refrain from using this to work on any tools (scissors and shears).
